I know how after the new year everyone is always saying how they want to lose the weight, eat healthy and actually stick to their plan. Right!? Don’t we all!? Just the other night as it was around dinner time I was searching online for a recipe for ground chicken. But the kicker was I needed to find one without eggs, cheese, tomato paste and the biggest one breadcrumbs. About half of the meals I was reading the very first ingredient called for breadcrumbs… SKIP….onto the next one I thought to myself. So I kind of came up with my own concoction and it turned out better than I even expected, which is pretty awesome! I say that because I’m not much of a cook. LOL! If it was up to me… and I could afford it I’d hire a chef to cook me healthy meals for the week. Now that would be “living the life!” #goals
I have been doing my best trying to eat healthy because I want to look a certain way. This has been a goal I try to achieve the start of the new year. But somehow I never have been able to conquer my weaknesses ie; chips, cookies, candy etc and over indulge. And then I wonder later how come I don’t have muscles and how come I’m always so tired. It was they way I was eating and the lifestyle I was living. No more I had told myself after I looked in the mirror seeing a different person. A person that is disciplined, can set goals and achieve them one-by-one and then inspire others with my results.
Back when I was living in Pensacola, Florida I stick to my meal plan and workout on the regular. Yes, it was a lot easier as I was off almost everyday over the summer months… and the gym we belonged to was about 5 minutes tops from where we had lived. Still there will be no more excuses for myself going forward. I realized then when I was sticking to the plan I felt 1000 times better, having more energy, in a better mood, clearer skin, stronger nails and didn’t get so tired so easily.
For the meal plan I’m currently on I avoid ALL junk food, breads… (so that means breadcrumbs) no added sugars, no more than 1 cup of coffee a day, no alcohol, 1 small piece of fruit a day and no oils. All meals are pre-made ahead of time in the comfort of my own home. That way it makes it so much more easier because you know exactly what you are going to eat for each meal. There is no thinking involved. I just had 3 chicken meatballs for lunch which is about 3 oz. If you aren’t sure how many ounces you are eating measure it out on a scale rather than guessing.
Preheat oven to 350°
- Entire package ground chicken
- Italian seasoning mix (sprinkle)
- Paprika (sprinkle)
- Onion Powder (sprinkle)
- Garlic Powder (sprinkle)
- Salt (sprinkle)
- Pepper (sprinkle)
- Basil ground (sprinkle)
- Olive oil (capful)
Directions: In a medium size skillet or pan lightly spray with pam. Mix all your ingredients well. Do not over mix. Take the wet mixture and make it into the size of a golfball. Place into the pan until lightly golden. Put in oven for 10 minutes. Check with a fork to be sure there is no pink. This meal is beat served with string beans, mixed veggies and brown rice.
